A Reflection in Thyme

What do you think when you see these tiny thyme flowers? Can you imagine their smell? Do you notice how they dance around with the two-toned blackberries? Does it remind you of anything? Can you get lost in a moment of reflection?

When one of our Co-Founders, Genna, came across this beautiful patch of flowering thyme, it filled her with mindfulness. It reminded her of Newfoundland where the herb blankets family gardens and perfumes the air. 

She describes a similar situation when she discovered a new blackberry bush on a recent nature walk. "I was immediately transported to BC—to a memory of picking wild blackberries with my family until our smiles were stained purple."

Fall is a time to observe. It's a time for reflection. It's a time to hold space for the things dearest to us. While this Thanksgiving is bound to be different, there's opportunity to forage for silver linings. Like more intimate gatherings and small things left unnoticed until life slowed down.

Some of our loved ones might be farther than we want but there are still ways to conjure their presence. Memories are stored in food. Make the same recipes, eat the same meals, smell the same smells. Be together in a moment even if you are actually apart.

A Reflection of Thyme is a blackberry kombucha shrub inspired by the meditative nature of fall. It's part of a series of non-alcoholic cocktails we're sharing for Sober October.

Blackberry and thyme non-alcoholic cocktail with Silver Swallow Luxury Kombucha

Ingredients
- 1 cup blackberries
- 5 sprigs of thyme (main stem & minor branches)
- 2 tablespoons apple cider vinegar
- 1/2 cup sugar
- 1/2 cup water

Steps
1. Bring to boil in a saucepan 1/2 cup of blackberries, apple cider vinegar, sugar & water. Reduce heat and simmer until berries are soft and the shrub is glowing red (about 5 minutes). 
2. Muddle the berries, add 4 sprigs of thyme and cook 1-2 minutes longer until you can smell the thyme.
3. Strain and let cool.
4. Rub a branch of thyme around the edge of a champagne flute to add extra aroma.
5. Add 3/4 tablespoon of blackberry shrub & fill with Silver Swallow Luxury Kombucha.
6. Garnish with fresh blackberries and a couple branches of thyme.
